A vegan restaurant in the former La Kitchenette spot at 805 Williamson St. is expected to open Thursday, according to the Wisconsin State Journal. La Kitchenette, a French cafe, closed in June after six-and-a-half years of operation.

Mad Rabbit Cafe, owned by Nate Anger — a former operator of California food truck and catering company, Rabbit Food Revolution — will be a fast-casual restaurant. Its offerings will include vegan burgers, vegan flatbreads, vegan chicken sandwiches, and vegan arancini. The spot will use Beyond burgers, which Anger sold from his food truck previously.
