After announcing the demise of the restaurant Forequarter in September, chef Jonny Hunter announced that Underground Butcher, a part of the Underground Food Collective, will close Dec. 15 and not reopen or relocate, according to a Wisconsin State Journalarticle. The meat market and grocery store had been in operation for seven years.
Hunter, co-owner of Underground Food Collective, says the decision to close Underground Butcher, at 811 Williamson St. does not affect Underground Meats, which provides cured meats and sausages to accounts nationwide.
Underground Food Collective is also the primary food vendor for events at the new Garver Feed Mill. Hunter says plans to open a restaurant and event space at Garver are still in the works, as well, although the kitchen has not yet been built.
The Underground Food Collective is working on a reorganization with Garver’s developer, Chicago-based Baum Revision, to create the space.
