Paoli’s Seven Acre Dairy Co., an $11.2 million boutique hotel, restaurant, cafe, and event business led by Nic Mink, is now part owner of Landmark Creamery, a cheese shop and cafe spearheaded by co-founder Anna Landmark, according to the Wisconsin State Journal. In a space adjacent to the Seven Acre Dairy Cafe, Landmark makes butter used in recipes at Seven Acre and sold to customers at the Dairy Cafe and at Landmark Creamery.

The Landmark Creamery & Cafe has now moved into Seven Acre. The cafe menu includes a mix of offerings from Landmark and Seven Acre. The retail shop, located inside the cafe and next to the butter production space, features gifts and specialty food products as well as cheese from Landmark and other companies.

The partnership will allow both companies to boost dairy product production and increase events focused on butter, cheese, and local foods. Meanwhile, Mink is seeking to further expand Seven Acre, creating an outdoor event space in a former whey pit on the property for music and stand-up comedy, outdoor dinners, and more. He also plans to build six to eight tiny homes to provide lodging opportunities beyond the existing eight hotel rooms by 2026.
