Ru Yi Hand Pulled Noodle could open as soon as Jan. 10 at 334 State St., according to a Wisconsin State Journal report, in the former Crandall’s Peruvian Bistro space.
The owners are Chaofu Lin and Xia (“Tina”) Jia, who also are partners in Madison Cuisine on University Avenue.
At Ru Yi, the Lanzhou-style, or “aggressively hand-pulled, springy noodles” — considered one of the top-10 noodles in China — are unlike anything this city has seen, the owners promise.
