New tavern, cheese shop to open in former One Barrel space on Atwood Avenue

A new tavern and cheese shop will open this February in the former home of One Barrel Brewing Company on Atwood Avenue, according to The Capital Times. The Wedge, located at 2001 Atwood Ave., will focus on Wisconsin-made specialties.

The spot’s main offerings will include drinks, cheese boards, and cold cheese sandwiches. Featured cheesemakers will include Emmi-Roth, Hook’s Cheese Co., Roelli Cheese Haus, and Saxon Creamery, among others. A retail space will sell items like crackers, jam, mustard, pickles, and more.

Owner and local chef Jacob Guyette has previously worked for Graze, Osteria Papavero, Octopi Brewing, and Estrellón. He plans for The Wedge to open in February, with a few “soft open” days possible in January, pending building inspections and alcohol licensure.

The Wedge will be open Wednesday–Sunday from 4–10 p.m.
