Madison’s culinary landscape is about to get richer with the opening of Amar Peru, a new Peruvian restaurant with a focus on seafood, according to a report from the Wisconsin State Journal. Located at 610 Junction Road, the site of the former Mr. Brews Taphouse, the establishment is the latest venture by Daniel Rodriguez and Esmeralda Bascones, the former proprietors of Inka Heritage.
Targeting an early June opening, Rodriguez is in the process of securing the necessary permits, enlarging the kitchen, and implementing various other upgrades to the space. The chosen location appealed to him due to its existing bar setup and ample parking availability. However, Rodriguez plans to eschew the previous establishment’s high bar tables and chairs in favor of smaller tables to enhance the dining experience.
Rodriguez and Bascones are no strangers to the Madison restaurant scene. They launched Pikkito, a casual, counter-service eatery in Middleton, in July, taking over the space formerly occupied by the Brazilian cafe and bakery, Tucumã. Their restaurant history also includes running Inka Heritage on Park Street from 2006 to 2016 and Estacion Inka near UW–Madison from 2016 to 2019, both of which have since been closed or sold.
