New chicken wing restaurant to occupy former Cosi spot on State Street

A chicken restaurant called Baked Wings is coming to the former Cosi spot at 250 State St., according to the Wisconsin State Journal. The 5,000-square-foot space owned by Mullins Group has been vacant almost nine years.

The restaurant will be opened by Bryan Suh, Scott Frank, and Marti McKinney, who partnered to open a previous Baked Wings location in a suburb of Rockford, Illinois last November.

The new spot will have a bar but be restaurant-first, serving bone-in and boneless wings as well as a meatless wing alternative. It will also offer chicken sandwiches and tenders, salads, Korean chicken tacos, and several other menu items.

The owners plan to open the Madison restaurant by early next year.
