According to the Wisconsin State Journal, a new restaurant called One and Only will replace Brasserie V on Madison’s near west side. The American bistro is set to open Wednesday at 1923 Monroe St.
Its menu will offer pub food in addition to several upscale meat and seafood options.
The restaurant is co-owned by Tim Thompson, Stephani Dalbesio, Myla Dalbesio, Marc Schiel, and Jameson Menz; William Tracy is its chef.
Brasserie V closed after 15 years in late August 2022 after experiencing job market-related challenges. The space has since undergone renovations.
