GlouGlou wine bar is becoming a permanent bistro on the near west side after a year-and-a-half as a pop-up business, the Wisconsin State Journal reports. In 2023, GlouGlou began using The Heights space on the near west side for its pop-ups, and owner MJ Hecox subsequently decided to make the 11 N. Allen St. spot permanent.
Hecox said the business passed its food inspection and is assembling a menu of global, shareable plates. She plans to source from local providers like east side Madison’s Elegant Foods and Prairie Du Sac’s Fox Heritage Farms. The new bistro is also employing food manager Sophia Yepez, a French-trained pastry chef, and will offer dessert and wine pairings.
GlouGlou is open Tuesday-Saturday from 3-9 p.m. and will remain open until 10 p.m. if the City Council approves its liquor license at its meeting on May 6. Hecox is also awaiting approval of an entertainment license so the business can host live music in the early evening.
GlouGlou will also continue to host Mosaic Dinners, a REAP Food Group and Dane County Food Collective initiative that fosters community connection.
