Molten Monkey Pizza to open on Madison’s near east side

Otto Dilba, co-founder of the former Ale Asylum brewery, is set to introduce a new culinary venture on Madison’s near east side, according to the Wisconsin State Journal. Molten Monkey Pizza will be located at 912 E. Johnson St., taking over the space previously occupied by Salvatore’s Tomato Pies.

Dilba has dedicated the past 15 months to perfecting the art of Detroit-style pizza in his home kitchen. He plans to unveil Molten Monkey Pizza in late August or early September. This unique style of pizza, originating in 1946, is known for its rectangular shape, thickness of at least an inch, and caramelized cheese edges.

Molten Monkey Pizza will offer an indoor seating capacity of 50, with additional outdoor seating for 20.
