Knoche’s meat popup coming to University Avenue

Knoche’s meat business, revived in part in 2022 by Andy Ziegler, who partnered with Steven and Stephanie Knoche, will have a popup store on Saturday outside of Steve’s Wine Beer Spirits at 3618 University Ave., the Wisconsin State Journal reports. The location is near the west side spot where Knoche’s meat was sold for 84 years.

The business will run out of a tent on June 1 and 15, July 6 and 20, and Aug. 17 and 31 from 10 a.m.–2 p.m. A test run on April 13 saw about 60 customers.

The popup will offer ground beef, ground-beef burger patties, hand-cut steaks, pork chops, ribs, cube steaks, and a private label aged cheddar cheese. A website for online orders is expected to be available by late June.

Ziegler currently sells Knoche’s meat to roughly 10 restaurants, including Tipsy Cow, Dexter’s Pub, Waypoint Public House, Driftless Social, and Seven Acre Dairy Co. He has a USDA processing facility in the basement of Athens Grill at 5430 Willow Road, which he opened in 2017.
