After Wisconsin’s Golden Guernsey Dairy went out of business, an Illinois company, Prairie Farms Dairy of Carlinville, Ill., won the bid to provide the cream used in the making of the Wisconsin State Fair’s cream puffs. The Wisconsin Baker’s Association, which made the decision, said no Wisconsin company was equipped to handle the 1,200 gallons of cream necessary to fill demands.
In a related story reported by WISN 12 News in Milwaukee, the Waukesha Golden Guernsey Dairy plant, which closed abruptly in January, leaving 100 people out of work, could reopen as soon as this summer. Its new owner, Lifeway Foods of Morton Grove, Ill., needs more capacity and space and would like to more than double its capacity by reopening the Waukesha facility. The company’s CEO even hinted at a return of the Golden Guernsey brand of milk, assuming everything falls into place. Lifeway won the Waukesha plant in an auction in May, and the deal should close on June 10.
