Draper Brothers Chophouse opening Monday on the Capitol Square

Draper Brothers Chophouse is set to open Monday on the Capitol Square at 101 N. Hamilton St. in the building once home to the Blue Marlin restaurant, according to the Wisconsin State Journal.

Owner Jack Sosnowski, who founded and formerly owned Rare Steakhouse and the Ivory Room Piano Bar, announced reservations are available through OpenTable. The restaurant currently employs 50 people, who are training this week. The menu, available online, features steak, rack of lamb, osso buco, seafood, chicken, and handmade pasta.

The space can accommodate seating for 90 people on two levels. The dining room will be open Monday–Thursday from 5–9 p.m. and Fridays–Saturdays from 5–11 p.m. The bar will be open Monday–Friday starting at 3:30 p.m. and Saturday starting at 4:30 p.m.; it will close at 10 p.m Monday–Thursday and at midnight Friday–Saturday.

Starting in February, the restaurant plans to be open for brunch on Sundays.
