Couple transforming Paoli dairy plant with $10.3 million renovation

Co-founder of Sitka Salmon Shares Nic Mink, and his wife Danika Laine, are planning a $10.3 million project to transform a former dairy plant in Paoli into Seven Acre Dairy Co., according to a Wisconsin State Journal report. The 21,000-square-foot facility was home to the Paoli Cheese Factory, Paoli Cooperative Dairy Co., and other operations before closing as an operating dairy in 1980. The completed building will include an eight-room boutique hotel, farm-to-table restaurant, cafe, and a micro-dairy that produces butter and ice cream using locally sourced milk.
