With Americans eating more protein-forward foods, Associated Milk Producers has decided to turn its plant in the Trempealeau County city of Blair from a cheddar cheese facility to a cottage cheese one, Wisconsin Public Radio reported.
The plant will shut down briefly in the spring, with workers temporarily laid off before coming back to work early next year.
Sarah Schmidt, vice president of marketing for AMPI, said cottage cheese demand has seen double-digit growth in recent years, and the market for it is expected to continue growing.
