A new pizza restaurant called Pedone Pinsa is coming to the Wisconsin Institutes for Discovery, — also called the Discovery Building — on Aug. 26.
The menu will offer Roman-style pizza with a flatbread-style crust known as pinsa. There will be four pizza varieties at a time, with a selection that rotates throughout the year. The restaurant, operated by the Wisconsin Union, has promised fast turnaround times, with each pizza cooking for around 90 seconds.

Pedone Pinsa shares a name with the Burlington-based producer of its pinsa, which is made using non-GMO flours. There are no added sugars and no artificial flavors.
The nonprofit Wisconsin Union runs more than 30 cafes, markets and restaurants, according to a news release. Food Fight Restaurant Group operates two other dining options in the building — Aldo’s Cafe and Steenbock’s on Orchard.
